SANO Amatriciano guanciale was awarded as the best guanciale in Italy in 2022.

Guanciale is obtained from the pig's jowl, salted and seasoned with spices before entering the drying phase. Once removed from the salt, drained, and tied with string, the guanciale is left to flavour with pepper: a touch that enhances its taste and imparts character without altering its flavour. The aging process is completed after a period of three months.

 

Quantity: 400g, 600g

Minimum aging: 60 days

Origin: Amatrice, Lazio

Ingredients: pork jowl, salt, saccharose, natural flavouring, spices. 

 

Optimal product duration and storage:

If kept unopened, the optimal duration is 90 days from the packaging date, at the indicated temperatures. It can be kept for up to 4-6 months in the lowest part of the refrigerator.

Once opened, it is advisable to keep it in the fridge wrapped in a cotton cloth or a fresh piece of plastic wrap. It can preserve its organoleptic qualities for up to a month but we advise to consume it within a few days, as over time it will lose its typical colour and aroma.

It is preferable to keep sliced pieces in airtight containers, or to first wrap them in baking paper and then in a sheet of aluminium foil, so that they do not undergo the oxidation process and do not absorb the "odours" of other foods. Slices can be stored for up to a maximum of 4 days preferably in the lowest part of the refrigerator.

Best not to put in the freezer: in addition to ruining the organoleptic properties, freezing cold cuts is highly risky because freezing increases the risk of oxidation and souring of fats.
